So, I started my vegan journey in August of 2017. It’s December now and since the temperature has dropped (quite drastically, I might add) I’ve been craving wonton soup from my favorite Chinese restaurant here in town. But… the broth of the soup is made from chicken/beef fat. So this is our vegan alternative! And its great! Very simple too.
First, sauté:
1/2 tablespoon – sesame oil
1/2 tablespoon – ginger (fresh or grounded)
1 whole onion
2 cloves of garlic green chiles
Then, add in and bring to a boil:
8 cups – water
1/2 cup – soy sauce
noodles of your choice
salt
kale (personal preference)
Let simmer until noodles are soft.
